Bev’s Crashes Into Core City With Bagels and Bialys

Max Sussman’s bagel deli named for his grandmother is now open seven days a week in Detroit’s Core City neighborhood. Bev’s Bagels serves sandwiches for breakfast and lunch, schmears, and even a pizza bialy topped with pepperoni cups. The operation grew from a pandemic pivot that ran out of Sussman’s Ann Arbor home. The restaurant opened in early May with reduced hours but is now ready to welcome the masses at 4884 Grand River Avenue, per a release. There are 11 styles of bagel offered from za’atar to spicy furikake to salt stick. They’re made with organic sourdough. Sussman wants to offer a rotating bagel of the month, too. A news release mentions wild-caught fish used in sandwiches and spreads. One selection, Salmons in the Steam, features wild smoked sockeye salmon. Vegan cream cheese is also available, alongside chile crisp and green goddess, and classic spreads. The drip coffee is from Ann Arbor’s Roos Roast. Designer Chelsea Hyduk aimed to remind visitors of classic Detroit diners with a curved counter with 10 stools in front of an open kitchen. In 2016, he opened Samesa, with his brother, restaurant meme lord Eli Sussman; Samesa showcased some of the influences of Levantine cuisine found in Detroit. His wife, Kate McCabe, is a partner in Bev’s. He’s written several cookbooks with his brother, Eli.
