Marrow Is One of America’s Best New Restaurants

For the last several months Eater has been scouring the country in search of the U.S.’s most compelling, new restaurants. As part of a collaboration between national and city editors, Eater reveals today its best new restaurants for 2019 including Detroit’s outstanding butcher shop and eatery, Marrow. These 16 restaurants represent the best in their class of openings between May 2018 and May of this year. As Eater’s restaurant editor Hillary Dixler Canavan puts it: “What moved us wasn’t merely virtuoso cooking or totally of-the-moment interior design. It was the feeling that a restaurant, whether a noodle shop slinging Laotian specialties in East Dallas or a tasting menu championing the overlooked delights of the Oregon coast in Portland, was the right place at the right time — right now.” It’s no surprise that Marrow has landed on this year’s list. The restaurant was named Eater Detroit’s Best New Restaurant for 2018, and has since gone on to receive accolades from the Detroit Free Press and a James Beard Award semi-finalist nomination in the the category Best New Restaurant. Chef Sarah Welch and Ping Ho have built an impressive business in West Village that’s supportive of the local agricultural system in Detroit and as well as great hospitality. But it’s the way they’ve invested in building a more sustainable work environment for the team of butchers, cooks, and service staff that really sets this restaurant apart. Now, Ho and Welch in partnership with Kiki Louya and Rohani Foulkes of the Farmer’s Hand and Folk are looking to apply those values to even more projects in the city, including a wine bar and restaurant called Mink.
